4 egg whites
2 cups hot syrup 240 degrees
Place the egg whites in snow (firm peak).
Add the syrup gradually, stirring continuously with the mixer.
Sugar and pie fruits
1 ¼ of cream
1 cup maple syrup
Bring to a boil. Add the butter which is well mixed with the flour 3 tbsp butter 3 tablespoons flour Mix well. Put the fresh fruit (blueberry, raspberry strawberry ...) in a crust cooked pie. Pour the thickened cream and maple syrup mixture with butter and flour on top. Cool completely
